Taco Salsa Chicken Recipe

 Need a dinner idea for Cinco de Mayo? Here is a family favorite good for any time and easily paired with some rice and salad! Make your fiesta complete with a colorful centerpiece from Rathbone’s Flair Flowers!

Taco Salsa Chicken

Becky Rathbone

  • 1 lb boneless skinless chicken breast
  • 1 pkg taco seasoning mix
  • 1 cup salsa
  • 1 can black beans drained
  • 1 can corn drained
  • 1 cup Monterey Jack cheese or sub low fat cheese

Spray a 9X13 baking dish with cooking spray. Place drained black beans, and drained corn in the bottom of dish. Coat the chicken with the taco seasoning and place on top of veggies. Top with the salsa. Cover with foil and bake in 350 degree oven for 35 minutes. Uncover the last 10 minutes and top with grated cheese.
